Ingredients
corn/flour tortillas
kalamata olives - 6oz
roasted bell pepper - 6
roasted garlic - 1 head
sundried tomato - 4oz
olive oil - 4 tbsp
basil
Directions
Preheat oven to 400 degrees.
Section bell peppers, remove seeds, then cut peppers into thick slices and place in a large baking dish. Peel garlic cloves and add to dish. Toss with olive oil and place in oven. Bake for 30 minutes or until pepper edges brown.
Get out your Cuisinart, it's my favorite kitchen gadget. Finely process olives, sundried tomato and roasted garlic into a delicious paste. Spread paste onto tortillas.
Add basil and Roasted peppers.
Hand roll in saran wrap, so easy a child can do it!
Wrap tightly and place in fridge for at least twenty minutes.
With a sharp knife (I sharpened mine twice) unwrap and slice into 3/4 inch slices and place on platter.
