California Cesar


Ingredients
romaine - 2 heads
garlic - 1 clove
soy milk - 1/4 cup
fillet of anchovy - 1 can
parmesan cheese - 4 tbsp
walnuts - 1/4 cup
avocado - 4oz
Directions
Get out that mini food processor, that's right, it's my favorite kitchen gadget!  Peel and place garlic clove in processor, followed by 4 anchovy fillets, soy milk and parmesan cheese.  Hit the button to "process," together.

Chop romaine and place into mixing bowl.  Cut avocado into small chunks and add to romaine.  Pour dressing from processor over top and toss.  Sprinkle nuts and add a dash of parmesan and any extra anchovy fillets to finish.


Serves four
Cook time is 15 mins.
