Ingredients
Chicken
Kale - 1 bunch
Poultry Seasoning
Avocado
Peanuts (Crushed)
Mint - 4 large leaves
Basil - 4 large leaves
Soy Sauce - 1 table spoon
Chicken Broth - 1 Table Spoon
Green Onion - 3 scallions
Directions:
Coat Chicken in seasoning of your choice, so that you can use what's left over for other recipes in the week. In a nonstick pan heat broth and soy sauce on medium heat. Add Kale and stir until Kale begins to wilt (about a minute) add peanuts, and chicken. Toss until evenly coated in pan. Remove from heat, then add herbs and scallions. Top with sliced avocado and serve.
