Savory Corn Cake

Ingredients
1 1/2 cups yellow cornmeal (preferably stone-ground)
3/4 teaspoon baking soda
1/2 teaspoon coarse salt
2 large eggs
1 3/4 cups of soy milk
1/2 stick unsalted butter, softened
Directions

Preheat oven to 425°F. 

Place a well-seasoned 9 inch cast-iron skillet in oven to heat.
In a large bowl combine cornmeal, baking soda, and salt.  In a small bowl whisk egg, then add milk.
Remove hot skillet from oven, (don't burn yourself) add butter,  then tilt pan to coat all sides of skillet. 
Pour hot butter into milk mix, then combine with cornmeal mixture - lumpy is fine. Empty batter into skillet. Decoratively spread roasted pepper & olive paste, then bake for 25 minutes. Slice and serve!
