Salad Spears

Ingredients
romaine spears
protein of your choice, meat, tofu, tuna,  - 2oz
avocado - 1.5oz
red seedless grapes - 1/4 cup
cranberries - 1tbsp
green onion - i scallion
rice vinegar - drizzle
tarragon - to taste
walnuts - 1 tbsp


Directions
I resort to this lunch often.  It's a great way to use up those left overs.  Simply chop your protein source, onion, avocado, and tarragon and place in small bowl. Toss in cranberries, grapes, and walnuts. Drizzle mixture with vinegar and mix well.  Fill your pre-washed spears of romaine, and you are all set to serve.

*This also makes a great tasting and attractive gluten free appetizer!
