corn / flour tortilla -1
avocado - 2oz
filling of your choice....
Directions:
Now, you can put nearly anything in a tortilla...I heat mine in a nonstick skillet (no oil required) and turn till evenly browned on both sides. You can toast them in a traditional toaster too. Mash avocado 1.5 - 2oz (Yes, I keep my scale at the ready, it's the only way to know exactly how much I'm really eating) onto the heated tortilla. Fill with fresh herbs such as mint, basil, dill, tarragon, add spinach, roasted vegetables, green onion, sliced apples e.t.c.
*If you are a carnivore, add turkey, turkey bacon, chicken, stay away from the red meat, people - it's not good for you.
This is gluten free, and most tortillas only have 75 calories or so, for one tortilla, which is half the calories of most bread. There is a fair amount of dietary fiber, and the more vegetables you use, the more fiber you will consume to help stabilize blood sugar levels.
I served this up along side sliced apples spread with cashew butter, and a pickle. Great for lunch or a quick dinner.
