Apple Cherry Tart....


Ingredients

Recipe for Skillet Corn Bread:
1 1/2 cups yellow cornmeal (preferably stone-ground)
                                                                                      3/4 teaspoon baking soda
1/2 teaspoon coarse salt
2 large eggs
1 3/4 cups of soy milk
1/2 stick unsalted butter, softened

Tart Topping:
Apples (thinly Sliced)
Cherries (pitted)
Nutmeg 
Cinnamon

Preparation for Skillet Corn Bread:

In a large bowl combine cornmeal, baking soda, and salt.  In a small bowl whisk egg, then add milk.
Place a well-seasoned 9 inch cast-iron skillet in oven to heat.
Remove hot skillet from oven, (don't burn yourself) add butter,  then tilt pan to coat all sides of skillet. 
Pour hot butter into milk mix, then combine with cornmeal mixture - lumpy is fine. Empty batter into skillet.  Bake for 25 minutes.


Preparation for Apple Cherry Tart:

Slice corn bread into desired servings and place on parchment covered baking sheet. Layer thinly sliced apples and pitted cherries on top, alternating rows. Sprinkle nutmeg and cinnamon over top. 
Bake in 400 degree oven for 20 minutes. Serve with your choice of dairy-free topping or tofutti ice cream!
