Ingredients
Recipe for Skillet Corn Bread:
1 1/2 cups yellow cornmeal (preferably stone-ground)
3/4 teaspoon baking soda
1/2 teaspoon coarse salt
2 large eggs
1 3/4 cups of soy milk
1/2 stick unsalted butter, softened
Tart Topping:
Apples (thinly Sliced)
Cherries (pitted)
Nutmeg
Cinnamon
Preparation for Skillet Corn Bread:
Place a well-seasoned 9 inch cast-iron skillet in oven to heat.
Remove hot skillet from oven, (don't burn yourself) add butter, then tilt pan to coat all sides of skillet.
Pour hot butter into milk mix, then combine with cornmeal mixture - lumpy is fine. Empty batter into skillet. Bake for 25 minutes.
